This garlic herb butter with thyme, crushed peppercorns and lemon zest is a very versatile and delicious add-on for many different dishes.
It is an ideal steak butter to give your meat that little extra flavor! Great for homemade garlic bread to accompany salads or soups. It also makes an excellent quick seasoning for stir-fried vegetables, as well as various types of BBQ meats!
This garlic herb butter recipe is easy to follow, quickly prepared. It can be stored in the fridge for as long as the "best before" date on the package of your butter allows.
Ingredients
These are the ingredients you need to prepare a small jar of garlic butter. Detailed measurements can be found on the bottom of the page 👇
The Butter should be at room temperature, so nice and soft, which makes it easy to mix all the ingredients together. Take the butter out of the fridge for about 30-40 minutes before mixing the ingredients. My personal preference is butter made from grass-fed cows which were raised hormone-free.
I always use fresh Thyme leaves, if you only have dried thyme available, that will work just as fine. However, the dried thyme leaves are not as flavourful as fresh ones. I would recommend letting the butter sit for a few hours before use, so the dried can leaves can absorb the moisture from the butter.
Freshly grated lemon zest 🍋; Lemons are often treated with pesticides and covered with wax to make them look shinier and protect against fungus. Since the peel of the lemon is needed for this recipe, I usually opt for organic lemons to make my garlic butter and wash them very thoroughly with warm water before use. Only grate the yellow layer of the peel.
Salt & Pepper 🧂As seen in the pictures, I use coarse Himalayan salt and whole black peppercorns. I usually grind the peppercorns and the Salt using a mortar and pestle. If you don't have a mortar, you can use pre-crushed peppercorns or pepper from a mill and regular salt. Another option is, you can fill the peppercorns and salt into a freezer bag or wrap them into a piece of parchment paper and gently crush them using a pan or the flat side of a meat tenderizer. Be careful not to damage your kitchen counter if you choose this option. I would recommend placing a kitchen towel on the counter and a cutting board on top. Next, put the freezer bag with the salt and pepper on the board and crush with the tool of your choice.
I use fresh Garlic in all my recipes, as it is one of my kitchen staples. I have never used either garlic flakes or powder and can therefore not give any recommendations on its use. For this recipe, we want the garlic to be finely minced. Therefore I squeeze the cloves through a garlic press. Alternatively, you can use a grater or chop the garlic cloves real fine.
How to make the Garlic Herb Butter
Preparation: Measure the butter and place it in a bowl to let it warm up to room temperature for about 30 minutes.
- The Lemon and Thyme: Grate the lemon peel until you have the required amount and remove the thyme leaves from the stems. Add the thyme leaves and lemon zest to the butter.
- Give the ground pepper and salt into the butter mix.
- Lastly, add the minced garlic and mix all ingredients throughly.
I recommend letting the garlic butter sit for at least one hour, to give all flavors time to blend together.
How do I use it

Meat
I use this butter for steak seasoning for both, searing the steaks as well as a finisher on the plate. You can use it for roasted tenderloin or to season your pan-fried chicken breast. It goes also great with fish or pork chops.
Homemade garlic bread
This butter is perfect to make your own garlic bread. Simply spread some of your butter on a few slices of bread and fry it in the pan or roast it in the oven.
Spice up your Vegetables
Don't feel like just plain vegetables? Steam or stir fry a mix of vegetables and finish them up with a spoon full of your garlic butter. In the example above, I stir-fried green asparagus and mushrooms in a pan and added some of the butter for extra flavor. Absolutely delicious!
Another option is, to add it to mashed potatoes, boiled potatoes or baked potatoes.

Ingredients
- 100 g butter (room temperature)
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon crushed peppercorns
- ½ teaspoon lemon zest
- 6 branches fresh thyme (the leaves)
