This Greek style oven baked feta cheese with tomatoes, olives and onions, topped with olive oil is one of my favourite meals in the Spring and Summer time. I love Mediterranean food and this dish is a perfect light lunch on hot days! Easy and quick to prepare in less than 30 minutes during lunch break!
This quick dish recipe is based on a popular Greek appetizer often called Feta Fournou - baked Feta cheese. It is usually offered in many different variations, with tomatoes, bell peppers, olives or kept simple with olive oil and onions. I love that it is a light and easy and is prepared in a heartbeat. Therefore, it is one of my go-to meals for lunch breaks on work from home days or on very hot days.

Feta Cheese - Whichever one you prefer. I would recommend a Feta cheese which is not too creamy.
Olives - Choose the olives you love, stuffed, pitted, green, red or black. In the pictures you see Spanish olives and Greek Kalamata olives, which are my personal favourites. Don't like olives at all? - No Problem! Just leave them out or substitute for bell peppers.
Tomatoes- Choose a flavourful tomato, like vine tomatoes or Roma tomatoes. Cherry tomatoes are also an excellent choice. If you go for those, simply cut them in half or quarters instead of slicing them.
Onion - My favourite to use are red or green onions but sweet or yellow onions, as well as shallots will work just too.
Rosemary - I use fresh rosemary. If you don't have any, just leave it out or replace it with for example fresh thyme.
Olive Oil - extra virgin. This is an important ingredient for this dish, so use a quality olive oil.
Pepper - fresh ground if available.
How to make Oven Baked Feta
The preparation is fairly simple. You'll need an oven safe form and that's pretty much it.
- Preheat the oven to 400°F / 200°C.
- Place the Feta in an oven safe form on top of the rosemary branches. This will prevent the rosemary from burning. Next add the olives.
- Evenly spread the tomato and onion slices across the form and add some (fresh ground) pepper. I don't use salt. The feta as well as the olives are soaked in brine, which makes adding more salt unneccessary.
- Lastly, pour the olive oil over the feta cheese, tomatoes, onions and olives.
- Place the form in the preheated oven and bake for approximately 15 minutes.
How to serve it
This dish is a great main course for a light lunch, served with baguette or pita bread and a side salad. In Greek restaurants, it is a very common appetizer. This baked feta can also be prepared in a aluminum pan on the BBQ and is a great side dish for grilled meats or vegetables.
You can easily add more or less olives, onions or tomatoes and additional vegetables, such as bell peppers or zucchini.
Need more? Just bake two or more slices of Feta. If you bake thicker Feta cheese slices, you will have to adjust the baking time.

- 1 Tomato (Roma or vine, sliced)
- 50 ml olive oil (¼ cup)
- Fresh ground pepper (to taste)
Instructions
