Do you love pasta with tomato sauce as much as I do? Then you'll love this recipe for a quick and super easy homemade Pomodoro sauce made from scratch. This dish will not take you longer to prepare than 20 minutes, no delivery service can compete with that 😉
Pasta with tomato sauce was my absolute favorite dish as a child. Therefore, homemade tomato sauce is pretty much the very first thing my father taught me to cook when I was a kid. I cook tomato sauce in many different variations, depending on my mood and which ingredients I have available. Spaghetti or any other type of pasta with homemade tomato sauce, preferably made from fresh tomatoes, is my ultimate comfort food and always brightens up my day. The big plus, it is prepared in no time.
The consistency of this particular tomato sauce is more on the chunky side. I made it up on a work at home day during lunch. Preparation, cooking and eating time ;), less than 45 minutes!
Ingredients
This is what you will need to make this quick homemade tomato sauce. Detailed measurements can be found on the bottom of the page in the recipe card 👇.
Fresh Tomatoes - 🍅 Vine tomatoes or Roma tomatoes are rich in flavor and will work best.
Olive oil - 🫒 essential for every tomato sauce.
Onion - Yellow onions, sweet onions or shallots, whichever you have available.
Garlic - finely chopped or minced. I use a garlic press to save myself time.
Sweet Paprika Powder for a rich flavor.
Sugar - Essential for every tomato based sauce. Sugar is a natural flavor enhancer and balances the acidity from the tomatoes. Your sauce will taste a lot more aromatic by adding some sugar.
Salt & Pepper - 🧂no need to explain the essentials.
Parsley - some chopped fresh parsley, added at the end gives this tomato sauce a fresh touch.
Pasta - Let's not forget about the most important part! I used fresh Pappardelle here but just pick your personal favorite.
Instructions
This sauce is prepared in no time. I use a large deep pan. The bigger surface compared to a small pot reduces the cooking time significantly.
- Place a pot with water for the pasta on the stove. When the water starts boiling, cook the pasta according the the package instructions. Fresh pasta has a reduced cooking time and you may perform this step a little later.
- Chop the onions and garlic. Next remove the stalk from the tomatoes and cut them into medium small dices. This is a quick tomato sauce with a chunky consistency. Therefore, I don't remove the skin. Keep all ingredients separately.
- Heat some olive oil in a pan on medium high heat. When the pan is hot, add the onions and glaze them until translucent.
- Add the garlic and paprika powder and stir for another 1-2 minutes. make sure the garlic does not turn brown or it will become slightly bitter.
- Give the diced tomatoes into the pan and simmer for roughly 10 minutes until the tomatoes start to fall apart when you squish them with the cooking spoon. Reduce heat if required to avoid excessive water evaporation.
- Add salt, pepper and sugar and stir. Lastly, add the pasta to the pan and mix well with the sauce.
Serve with Parmesan and additional chopped parsley!
Pappardelle in Fresh Tomato Sauce
Ingredients
- 6 tomatoes
- 2 tablespoon Olive oil
- 1 medium sized onion (if large, use ½ onion)
- 2 cloves garlic (minced)
- 1 teaspoon sweet paprika powder
- ½ tablespoon sugar
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ bunch flat parsley
- 350 g dried Pappardelle (or other pasta, if fresh ~500g)
