This Greek style oven baked feta cheese with tomatoes, olives and onions, topped with olive oil is one of my favourite recipes for the Spring and Summer time. I love Mediterranean food and this dish is a perfect light lunch on hot days! Easy and quick to prepare in less than 30 minutes during lunch break!
Place the Feta in an oven safe form on top of the rosemary branches. This will prevent the rosemary from burning. Next add the olives.
Give the tomato and onion slices into the form and spread some (fresh ground) pepper across the the other ingredients. I don’t add salt. The feta as well as the olives are soaked in brine, which makes adding more salt unneccessary.
Lastly, pour the olive oil over the feta cheese, tomatoes, onions and olives.
Place the form in the preheated oven and bake for approximately 15 minutes.
