Bacon Aioli is a creamy, flavorful dipping sauce that is ideal for french fries, potato wedges or simple bread any sandwich. The crunchy bacon combined with garlic in this mayonnaise based sauce makes it an amazing spread for sandwiches, such as BLT and chicken club sandwiches, as well as hamburgers.

What is Aioli
Aioli, allioli or aïoli originated in Spain, is a sauce consisting of olive oil, garlic salt and egg. However, there are some traditional Aioli recipes without eggs.
It is also common to add lemon juice to the Aioli sauce to give it a fresh zesty twist. The word "Aioli" means garlic and oil and nowadays is commonly used to describe garlic mayonnaise.
This recipe is not a traditional Aioli recipe, but a modern interpretation of garlic mayonnaise with crispy bacon pieces.
Growing up in Europe, I became a big fan of Spanish cuisine and Aioli is by far my favorite dipping sauce. A plate with Spanish olives, Aioli and fresh bread can absolutely make me happy!

What you need

Mayonnaise - Use your favorite store-bought mayo or make your own, which is actually very simple. A great recipe for homemade mayo is posted on Downshiftology for No-Fail Homemade Mayonnaise.
I use store-bought mayo, which is one of the very few condiments I buy pre-made, I recommend carefully reviewing the ingredient list, choosing the one with the least amount of additives and preservatives.
Olive Oil gives our bacon aioli some extra flavor and helps to improve consistency and increase the creaminess of this delicious dipping sauce.
Lemon Juice is not a must, but I love the fresh citrus flavor of lemon in my Aioli and it makes the sauce appear lighter and less rich. Freshly squeezed juice is what I recommend using.
Bacon - The crispy bacon pieces in this garlic mayonnaise it what makes this Aioli special.
Garlic is a must, or else it's just bacon mayonnaise. As always, I use fresh garlic to make this aioli. I never used garlic powder and can therefore not provide guidance on the amount that should be used instead of fresh garlic.
How to make Bacon Aioli
Gather your Equipment
Making this tasty dipping sauce is extremely easy and there are only a few kitchen items you need.
To get started we need a pan to fry the bacon, a chef's knife and a cutting board to chop the crispy fried bacon into small pieces, a bowl and a spoon for mixing all ingredients and a garlic press.
If you do not own a garlic press you can also finely chop the garlic or use a bleander to blend all ingredients together. But a garlic press is generally inexpensive and for me an absolute kitchen staple. I linked you some on amazon here*.
Let's Get Started
- Take a pan and heat it up on high heat. Next, fry the bacon slices until golden and crispy. Remove the bacon from the pan and let the slices cool down on a plate.
- Place the bacon slices on your cutting board and finely chop them.
- Add mayo, lemon juice, olive oil, minced garlic, salt and pepper, as well as the chopped bacon to a bowl. Leave a tablespoon of chopped bacon on the side to decorate the dip later on.
- Mix everything until well combined. If not served immediately, cover the bowl with a lid or cling foil and store the sauce in the fridge until you need it.
What to serve with Bacon Aioli
Bacon aioli is a delicious savory dipping sauce for homemade French Fries, Sweet Potato Fries, Roasted Vegetables, Potato Wedges, Air Fried Carrot Fries or simply for fresh homemade bread, such as my Artisan Dutch Oven Semolina Bread.
It can be used as a spread for all kinds of sandwiches, like a BLT Sandwich, Chicken Club Sandwich or for hamburgers, and is a great sauce to serve at BBQs with grilled meats and vegetables.
Storage and Food Safety
Freezing is not recommended for this sauce and it should not be left out in a warm environment for extended periods of time. The dip stored in a sealed container will last in the refrigerator for 2-3 days.
